Yesterday morning, several tea-frying stoves were neatly arranged in a row at the entrance of the Da Shijie Tea City on Jiangdong Middle Road in Nanjing, where tea-making workers dressed in white lab coats were carefully processing fresh tea leaves just delivered from Anji.
"White tea costs have increased by 15% compared to last year," revealed Yang Xiaodong, the owner of the tea market, to our reporter. "Originally, a tea picker earned 120 yuan per day, but this year that figure has risen to 160 yuan. Meanwhile, the price of fresh tea leaves has gone up by about 20%. On top of that, the wages for skilled tea processors have also climbed—from over 200 yuan a day last year to 300 yuan today. All these factors have contributed to a general rise in white tea prices this year." He added that roughly five pounds of fresh tea leaves typically yield one pound of dried tea.
“White Tea in the World, Chinese White Tea in Fuding” – White Tea and Fuding White Tea

White tea is one of the traditional six major categories of tea. Known as "white tea" due to its unique production method—where leaves are neither pan-fired nor rolled—the finished tea features delicate white downy hairs covering its surface, giving it a distinctly white appearance. White tea is celebrated for its elegant qualities: beautifully intact bud tips, an amber-yellow and remarkably clear liquor, and a mild, subtly sweet, and refreshingly smooth taste. Primarily produced in regions such as Fuding, Zhenghe, Songxi, and Jianyang in Fujian Province, white tea is a specialty tea unique to Fujian.
According to the *China Tea Industry Dictionary*, white tea is defined as "one of the basic tea categories—a lightly fermented tea characterized by its surface entirely covered with white, fine hairs. Modern white tea production typically involves just two steps: withering and drying. Because the leaves are not subjected to rolling or kneading, they retain their original shape when brewed, unfurling gracefully while releasing a mellow aroma. However, the resulting tea liquor tends to be lighter in color compared to other teas."
