“White Tea in the World, Chinese White Tea in Fuding” – White Tea and Fuding White Tea
2013-03-12
White tea is one of the traditional six major categories of tea. Known as "white tea" due to its unique production method—where leaves are neither pan-fired nor rolled—the finished tea features delicate white downy hairs covering its surface, giving it a distinctly white appearance. White tea is celebrated for its elegant qualities: beautifully intact bud tips, an amber-yellow and remarkably clear liquor, and a mild, subtly sweet, and refreshingly smooth taste. Primarily produced in regions such as Fuding, Zhenghe, Songxi, and Jianyang in Fujian Province, white tea is a specialty tea unique to Fujian.
According to the *China Tea Industry Dictionary*, white tea is defined as "one of the basic tea categories—a lightly fermented tea characterized by its surface entirely covered with white, fine hairs. Modern white tea production typically involves just two steps: withering and drying. Because the leaves are not subjected to rolling or kneading, they retain their original shape when brewed, unfurling gracefully while releasing a mellow aroma. However, the resulting tea liquor tends to be lighter in color compared to other teas."

On February 25 (the 16th day of the first lunar month), the first batch of white tea from the 100-acre ecological tea garden at Longtinggang in Kongyu Village, Dingtou, began harvesting. With the early-maturing varieties like "Zao Fengchun" and "Xiao Zaicha" already being picked, new tea varieties across our city will soon enter their respective harvesting periods.
Visiting his ecological tea garden, the reporter witnessed a vibrant scene: tender green tea buds were sprouting eagerly on each tea plant, while more than ten skilled female tea pickers swiftly gathered this year’s first spring harvest, officially kicking off the 2013 spring tea-picking season.
Kongyu Ji shared with the reporter: "This year marks an early spring—spring arrived earlier than usual. Plus, thanks to the abundant rainfall we had at the end of last year…"

Recently, reporters learned from Doutou Town in Fuding that, thanks to recent warmer temperatures and abundant rainfall, the first batch of Fuding white tea for this spring has begun harvesting—about half a month earlier than last year. As early-maturing varieties like "Zao Feng Chun" and "Xiao Zao Cha" are already being picked, new tea varieties across Fuding will soon follow suit into the picking season.
According to local villagers, spring arrived earlier this year, and combined with the plentiful rainfall at the end of last year and consistently higher-than-average temperatures after the Lunar New Year, conditions have been exceptionally favorable for tea bud development. As a result, this year’s spring tea buds emerged much earlier, allowing harvesting to start sooner than last year. In fact, this early start to the spring tea season is the first time it has happened in nearly five to six years. The freshly brewed tea from the first batch of harvested leaves boasts a sweet, refreshing flavor.

Talking about the income from growing white tea in recent years, Lin Lao Bo, a tea farmer from Bailin Town, Fuding City, Fujian Province, excitedly shared his calculations with the reporter: "Previously, Fuding white tea sold for 70 to 240 yuan per kilogram, but this year prices have soared to between 240 and 2,400 yuan per kilogram. Back then, our region produced just over 3,000 tons of white tea—now it’s risen to more than 4,500 tons. And while the average profit per unit area used to be only around 1,000-plus yuan, it’s now climbed to over 10,000 yuan."
When asked about the reasons behind these remarkable changes, Lin Lao Bo explained: "In recent years, thanks to the government’s guidance, Fuding white tea cultivation has become far more standardized. As a result, the tea tastes even better, its reputation has skyrocketed, and now people are flocking to buy it specifically because of its legendary quality."
The Health Benefits of Fujian Aged White Tea
2013-01-06
White tea is a unique tea variety exclusive to China, crafted from the tender buds of distinctive tea tree varieties covered in delicate white down—such as Fuding Da Bai Cha, Fuding Da Hao Cha, and Zhenghe Da Bai Cha—using a one-of-a-kind processing method that involves no frying or rolling, only withering and drying. Its production is geographically limited to just two regions in Fujian Province: Fuding and Zhenghe. As a result, white tea remarkably preserves the tea leaves' natural nutritional and health-promoting compounds. Interestingly, while the same tea tree varieties are also used to produce black tea and green tea, the beneficial functional components differ significantly across these types. Specifically, when processed into white tea, it boasts higher levels of key health-promoting elements—such as theanine, flavonoids, caffeine, and vitamins C and E—compared to both black and green teas, often exceeding them by up to 30%.

Years of research by Chinese CDC experts have shown that Fuding white tea possesses a variety of health-promoting benefits, including blood sugar reduction, lipid-lowering effects, and immune-boosting properties. Commissioned by the Fuding Municipal Government, Researcher Han Chi and his team from the Institute of Nutrition and Food Safety at the China Center for Disease Control and Prevention have been diligently studying the efficacy of Fuding white tea since 2009. Their findings reveal that Fuding white tea can help lower blood sugar, reduce blood lipids, and enhance immune function—offering multiple health advantages.
Researcher Han Chi and his team initially conducted their studies using animal models. They randomly divided 6- to 8-week-old female BALB/c mice into four groups based on body weight: a control group (water-only control) and three groups receiving White Peony white tea.

In the past, white tea was traditionally produced only during one season—but now, producers are bustling with activity even in summer and autumn, busy pressing white tea cakes. Reports indicate that thanks to the soaring demand for aged white tea and growing awareness of its health benefits, Fuding white tea has been selling exceptionally well this year. As a result, the production cycle has expanded from spring into the summer and autumn months. Meanwhile, white tea prices have also risen across the board.
Fuding’s popular white tea cakes are particularly in high demand during the summer and autumn seasons. "Although our company has occasionally produced white tea cakes during these seasons in recent years, this year we’ve seen a significant increase in output," says a representative. "Indeed, this year’s Fuding white tea cakes have become one of the standout products in the local tea market."
It’s worth noting that Fuding white tea cakes are crafted using minimal processing steps, preserving the tea’s natural essence and delicate flavors.
