Fuding white tea is actually a lightly fermented tea—a traditional famous variety created by Chinese tea farmers. It’s one of China’s six major tea categories. Here’s something important to note: this type of tea isn’t subjected to processes like steaming or rolling; instead, it’s simply dried—either naturally in the sun or over low heat—before being processed. Meanwhile, another popular type, called "Gongmei," is made by processing one bud paired with one or two tender leaves from either Fuding white tea or Quancheng green tea. Lastly, there’s "Shou Mei," a unique white tea created exclusively from freshly picked leaves that have undergone acupuncture-like treatment during processing.

The production process of Fuding white tea typically involves two main steps: withering and drying—though the key stage is withering. Withering can be categorized into three methods: indoor natural withering, compound withering, and heated withering. Depending on the climate, Fuding white tea production should be flexibly adjusted; ideally, sunny days in spring or autumn, or even mild, non-humid summer days, are best suited for this process. In such cases, either indoor withering or compound withering is preferred. After removing stems, broken leaves, waxed leaves, red-tinged leaves, and blackened leaves, the tea undergoes a gentle roasting process over low heat until it reaches the perfect level of dryness. It’s only when properly dried that the subtle aroma of fire complements—and enhances—the delicate fragrance of the tea itself. The tea is then promptly packed while still warm. A defining characteristic of this white tea-making method is that it neither destroys enzyme activity nor accelerates oxidation, preserving the tea’s natural aroma and delivering a fresh, flavorful brew. Commonly, Fuding white tea is harvested at optimal temperatures, with one tender bud and a single young leaf carefully plucked to ensure freshness. These buds and leaves are picked early, ensuring they remain young, delicate, consistent in size, and free from impurities. The harvested tea buds often resemble tiny blossoms, evenly shaped and neatly arranged, with short stems. Handling during picking is done with utmost care to avoid bruising or damage.
