Shou Mei is sometimes referred to as Gong Mei. The finished product features slightly plump leaves with buds still attached to their stems, creating a tight, curled appearance resembling eyebrows. It boasts a harmonious color palette, a clean finish, and a mellow, smooth flavor. The raw materials for producing Gong Mei are carefully selected—typically one bud accompanied by two or three tender leaves. These must include both young and robust buds. The initial processing steps closely mirror those used for Bai Mu Dan, another prized white tea variety. White tea has long been celebrated as a rare gem among teas, with its elegant and renowned reputation dating back over 880 years. Made from the short, delicate buds and larger, silvery-white leaves of the Cai Cha variety (a local term in Fujian’s tea regions for common shrub-type tea plants), this tea is affectionately known as "Gong Cha" and "Mei Cha," with Shou Mei being one of its most beloved forms.
